Traditional Yoghurt Pancakes

We’re so pleased to bring you another family recipe that was passed down by Jackie’s Mum, Granny Edna. These tasty pancakes are the kids’ breakfast of choice! You can customise by adding chocolate chunks, blueberries or whatever you fancy.. Garnish with a dollop of creamy yoghurt. and some fruit for a lovely breakfast or afternoon tea.

Ingredients:

10 oz Plain Flour

1 tsp Baking Soda

4 oz Sugar

2 Eggs

1 tbsp Rapeseed / Vegetable Oil

800g of Yester Farm Dairies Natural Yoghurt (use Greek Style, Whole Milk Natural or Low Fat)

Method:

  • Whisk eggs and sugar together then add other ingredients and whisk until smooth.

  • For best results rest mix in fridge for 10 to 20 minutes.

  • Wipe pancake pan with oil and spoon the mixture in to the size of pancake you like.

  • Flip when the edges are cooked and you start to see bubbles rise.
