Cottage Cheese & Chive Scones

Ingredients:

200g Self-Raising Flour

Good pinch Salt

4 or 5 twists of Black Pepper

60g Unsalted Butter

10g Snipped Chives

100g Yester Farm Dairies Cottage Cheese

80ml Milk

Grated Cheddar (optional)

Method:

  • Plop flour, salt and pepper into a bowl and mix.

  • Rub the butter into the flour until it looks like breadcrumbs.

  • Stir in the chives then add the cottage cheese and milk.

  • Working quickly, mix everything together with a knife.

  • If the dough is a bit sticky, add some more flour; if it is a bit dry, add a touch more milk.

  • Tip onto a lightly floured worksurface and knead gently until smooth, don’t overwork the dough or your scones will be flat and tough.

  • Either shape into a round and cut into six wedges or stamp out using a cutter.

  • Pop onto a floured baking sheet and, if using, top with a little grated cheese.

  • Slide into a preheated oven (180C/Fan 160C/Gas 5) for about 10-15 minutes.

.These are lovely with cream cheese and smoked salmon or with lashing of cold butter!

Other Savoury Options:

Chopped sundried tomatoes and basil.

Cooked, cooled pancetta and fennel seeds, topped with grated parmesan.

When it’s in season, try wild garlic.

Grated cheddar or other strong cheese

 Sweet Options

If you fancy some sweet scones, omit the savoury elements and add a handful of blueberries, grated lemon zest and a tablespoon of caster sugar instead.

Sultanas, dried cherries, dried cranberries with grated orange zest are also good. Serve with whipped cream and jam.
